The lectin-free diet is aimed to reduce inflammation and digestive issues, leading to various health problems. Lectins are proteins found in raw legumes—such as peas, beans, lentils, soybeans and peanuts—and in whole grains such as wheat. Cooking, pressure cooking or boiling pulses can reduce lectins thereby reducing the inflammation experienced.
